You need to get it running, MOT'd and legal first. Drive it as it is before you start chopping bits out or messing with heights...

Then the answer is 15's and big rubber... 

Forget driveability though as this size rubber will seriously alter the way the car drives.

My front coilovers cost £349 and were a nice easy fit.

Mine is adjustable coilovers on the front and standard multileaf escort on the back. Even the old fronts were standard... 

This is my old series 2 on 205/60/13's, loads of clearance.

The height on yours isn't much different.
